Il Palio Restaurant
Chef, Jeff Urban Jeff is a Culinary Institute of America graduate, Class of 1997. In the winter of that year, the C.I.A. was commissioned to redesign the international flight menus for United Airlines, Jeff was hand picked by the Certified Master Chef that headed up the project, and spent two months working with chefs from across the world at their headquarters in Chicago, Illinois. In 2001, American Food Tasting's Gold Medal of Excellence was awarded to Jeff.
After completion of that project, Mr. Urban headed back to Greenwich, CT to Mediterraneo Restaurant. Jeff had started to work at Mediterraneo in the fall of 1996, where he also completed his externship, to explore the possibility of improving his skills. Over the next six years, he spent time at Mediterraneo moving up the ranks to become Chef de Cuisine.
In February of 2001, Jeff was offered and took the Executive Chef position at Tamarack Country Club, in Greenwich. While his time at the club was enjoyable and rewarding, Mr. Urban was called upon, the following year, to run Acqua Restaurant in Westport. He gladly accepted the challenge, to be back in a restaurant and let his creativity flourish.
Jeff has come to Il Palio, to make his mark on the culinary world and looks forward to let that come out with his creative and delectable dishes.
